A refreshing and colorful salad that’s perfect for a light meal or a side dish. The combination of fresh veggies, sweet grapes, and creamy Thousand Island dressing makes it a hit for any occasion. The addition of boiled eggs adds a protein boost, making it a complete and satisfying dish.

Ingredients:

  • 1 onion, chopped
  • 1/2 zucchini, chopped
  • 2 carrots, chopped
  • 4 baby cucumbers, chopped
  • 4 cherry tomatoes, sliced
  • A handful of grapes, chopped
  • 1/4 cup boiled corn
  • Salt to taste
  • Crushed peppercorns to taste
  • 2 tbsp Thousand Island dressing
  • A handful of lettuce, chopped
  • 1 basil leaf, chopped
  • 1/8 cup kale leaves, chopped
  • Juice of 1/2 lemon
  • 3 boiled eggs, sliced

Instructions:

  1. Prepare the Veggies: Start by washing and chopping the onion, zucchini, carrots, baby cucumbers, cherry tomatoes, and grapes.
  2. Mix the Salad: In a large bowl, combine the chopped carrots, zucchini, cucumbers, onions, and boiled corn. Add the sliced tomatoes, a pinch of salt, crushed peppercorns, and 2 tbsp of Thousand Island dressing. Mix everything well.
  3. Add Greens: Incorporate the chopped lettuce, basil leaf, and kale leaves into the salad. Squeeze the juice of half a lemon over the mix and toss gently.
  4. Finish with Grapes: Add the chopped grapes to the salad and mix again, ensuring all the flavors are well combined.
  5. Serve: Transfer the salad to a serving plate. Arrange the boiled and sliced eggs around the salad, and sprinkle some crushed pepper on top.
  6. Enjoy Fresh: Serve the salad fresh and enjoy the vibrant flavors!

wash and prepare the vegetables

in a bowl, take all the chopped vegetables

add boiled corn and sliced cherry tomatoes

add salt

add pepper powder

i have used thousand island dressing for this salad, you can replace it with simple yogurt or mayonnaise

mix everything well

add chopped kale

chopped grapes

mix well to combine it thoroughly

transfer to a serving plate

arrange boiled and sliced eggs on the sides of the serving plate. sprinkle some pepper powder on top.
