Ingredients

  • 3/4 cup mini soya chunks
  • 1/2 tsp salt
  • hot water to soak
  • 5-6 baby cucumbers - sliced,
  • 1 small capsicum - chopped,
  • 4 cherry tomatoes - halved,
  • 1/8 cup spring onions - chopped,
  • 1/8 cup curd - 2 tsp mayo,
  • 1/2 tsp pepper powder
  • 1/4 tsp cumin powder
  • little water
  • chopped parsley
  • additional 1/8 tsp salt

Instructions

  • Soak soya chunks in hot water with salt for 15 minutes
  • drain and squeeze excess water
  • mix with cucumbers, capsicum, tomatoes, and spring onions
  • whisk curd, mayo, pepper, cumin, water, and parsley
  • pour dressing over veggies, toss gently
  • garnish with parsley
  • serve fresh
