Soya Chunks Salad
A quick, protein-rich salad with tangy yogurt dressing

- 3/4 cup mini soya chunks
- 1/2 tsp salt
- hot water to soak
- 5-6 baby cucumbers - sliced,
- 1 small capsicum - chopped,
- 4 cherry tomatoes - halved,
- 1/8 cup spring onions - chopped,
- 1/8 cup curd - 2 tsp mayo,
- 1/2 tsp pepper powder
- 1/4 tsp cumin powder
- little water
- chopped parsley
- additional 1/8 tsp salt
Soak soya chunks in hot water with salt for 15 minutes
drain and squeeze excess water
mix with cucumbers, capsicum, tomatoes, and spring onions
whisk curd, mayo, pepper, cumin, water, and parsley
pour dressing over veggies, toss gently
garnish with parsley
serve fresh
