Peas Egg Curry Recipe
A delicious and mildly spiced curry with eggs, peas, and coconut milk.

- 300 g peas
- 3 boiled eggs
- 2 tomatoes
- 2 onions - chopped
- 4 garlic cloves
- ½- inch ginger
- 1 green chili
- 1 cup thin coconut milk
- 1- inch cinnamon
- 2 cloves
- 2 cardamom pods
- 1 tsp fennel seeds
- ¼ tsp turmeric powder
- ½ tsp chili powder
- 1 tbsp Kashmiri chili powder
- 1 tbsp coriander powder
- ¼ tsp salt
- 1 tbsp oil
- 1 tsp coconut oil
Boil peas with salt until soft and keep aside.
Cook spices with tomatoes and blend into a paste.
Sauté garlic, ginger, and onions until golden.
Add the masala paste, cook till oil separates.
Add peas, eggs, coconut milk, and tomatoes. Simmer for a few minutes.
Garnish with coriander leaves and serve hot.
