Ingredients

  • 1/4 cup peanuts
  • 1/8 cup rolled oats
  • 1 tbsp honey - or dates as needed for sweetness
  • 1/8 cup pumpkin seeds
  • 1/8 cup desiccated coconut
  • 1/8 cup pistachios - for coating

Instructions

  • Grind Peanuts and Oats: In a blender, grind 1/4 cup peanuts until coarsely powdered. Add 1/8 cup rolled oats and blend again.
  • Add Sweetener: Add 1 tbsp honey (or dates) and blend to form a moist mixture.
  • Add Pumpkin Seeds & Coconut: Blend in 1/8 cup pumpkin seeds and 1/8 cup desiccated coconut.
  • Form Balls: Transfer the mixture to a plate and shape into even-sized balls.
  • Coat in Pistachios: Blend 1/8 cup pistachios to a powder. Roll the balls in the pistachio powder.
  • Chill: Refrigerate the balls for 30 minutes to firm up.
