- 1/4 cup peanuts
- 1/8 cup rolled oats
- 1 tbsp honey - or dates as needed for sweetness
- 1/8 cup pumpkin seeds
- 1/8 cup desiccated coconut
- 1/8 cup pistachios - for coating
Grind Peanuts and Oats: In a blender, grind 1/4 cup peanuts until coarsely powdered. Add 1/8 cup rolled oats and blend again.
Add Sweetener: Add 1 tbsp honey (or dates) and blend to form a moist mixture.
Add Pumpkin Seeds & Coconut: Blend in 1/8 cup pumpkin seeds and 1/8 cup desiccated coconut.
Form Balls: Transfer the mixture to a plate and shape into even-sized balls.
Coat in Pistachios: Blend 1/8 cup pistachios to a powder. Roll the balls in the pistachio powder.
Chill: Refrigerate the balls for 30 minutes to firm up.
