Mulberry Coconut Energy Balls | Zero Sugar Healthy Snack

- 1/2 cup cashews
- 6-7 pitted dates
- 6-7 mulberries - fresh or soaked if dried
- 1/8 tsp lemon zest
- 1/2 tbsp lemon juice
- 1/4 tsp vanilla essence
- Pinch of salt
- 1/8 cup desiccated coconut - plus extra for rolling
Grind cashews into a coarse powder.
Add dates, mulberries, lemon zest, lemon juice, vanilla essence, and salt. Pulse grind 4-5 times.
Add desiccated coconut and pulse to combine.
Shape the mixture into balls and roll in extra coconut.
Refrigerate for 30 minutes and enjoy.
