Mulberry Coconut Energy Balls | Zero Sugar Healthy Snack

Ingredients

  • 1/2 cup cashews
  • 6-7 pitted dates
  • 6-7 mulberries - fresh or soaked if dried
  • 1/8 tsp lemon zest
  • 1/2 tbsp lemon juice
  • 1/4 tsp vanilla essence
  • Pinch of salt
  • 1/8 cup desiccated coconut - plus extra for rolling

Instructions

  • Grind cashews into a coarse powder.
  • Add dates, mulberries, lemon zest, lemon juice, vanilla essence, and salt. Pulse grind 4-5 times.
  • Add desiccated coconut and pulse to combine.
  • Shape the mixture into balls and roll in extra coconut.
  • Refrigerate for 30 minutes and enjoy.
