watermelon sabzi recipe /Watermelon curry – Watermelon in spicy and tangy vegetable gravy

Watermelon subzi is completely my new try with the fruit i had at home. It is spicy version of the gravy. You can skip adding green chilli if you like it to be little sweet. watermelon sabzi
This is a watery gravy because the watermelons makes it so. If you want it in gravy consistency smash the vegetables a little before adding watermelons and a tsp rice powder or corn flour. mix well. Note that it should be done before adding watermelons.
Adding additional vegetables is of your choice.I have used carrots, beans, capsicum and spring onions. You can even add potatoes, peas or any other vegetables. Keep it limited to 3-4 vegetables.
If you want only the melon, those vegetables can be skipped. Do not stir the gravy a lot after adding melons if you like to have the pieces in gravy.

Watermelon sabzi recipe : Pictorial directions:

1. Heat oil and ghee, pop in fennel seeds.
2. Add chopped onions and saute well until it turns brown
3. Add ginger garlic paste and saute until raw smell goes off
4. Add chopped tomatoes and saute until it is mushy.
5. Now add masalas ..turmeric,chilli,corriander, cumin and garam masala powder.
6. Saute well until it leaves out oil. Sprinkle water if required but dont burn the powders.
7. At this stage, add chopped vegetables including spring onion. Watermelon to be added at last.
8. Mix well add water and salt required and let the vegetables cook.
9. Finally add watermelon, make slits in green chilli and add them and also sprinlle kasuri methi. Mix well and give it a boil. Note that watermelon has to be de-seeded and chopped to chunks
Serve hot with chappathi.

  • Watermelon cut into cubes 1 cup
  • Onion 2 no chopped finely
  • Tomato 1 no chopped finely
  • Ginger garlic paste
  • Butter
  • Oil
  • Fennel seeds 1 tsp
  • Turmeric powder
  • Corriander powder 1 tbsp
  • Chilli powder 1 tbsp
  • Cumin powder 1 tsp
  • Garam masala 1/2 tbsp
  • Carrot 1 no diced
  • Beans 2 - 3 nos chopped
  • Capsicum 1/ 4 diced
  • Spring onion finely choppped 2 tbsp
  • Green chilli 2 nos
  • Kasuri methi 1 tsp

Instructions
