For this recipe, Ladies finger has to be chopped very finely unlike the other stir fries or the sambar cut. If we chop them very finely, they get fried fast and crispier.

Ingredients
- 2 tbsp coconut oil
- 1/2 tsp mustard seeds
- 1/4 tsp cumin seeds
- 1 sprig curry leaves
- 2 medium onions finely chopped
- 3 cups ladies finger finely chopped
- 1/4 cup coconut grated
- 1/8 tsp turmeric powder
- 1/2 tsp chilli powder
- 1/4 tsp cumin seeds
- salt to taste
Instructions
- Finely chop the ladies finger and keep it ready.
- Heat coconut oil and crackle mustard seeds, cumin seeds, curry leaves, chopped onions and fry until transparent.
- Further, add chopped ladies finger and fry until toasted.
- To the toasted ladies finger, grind coconut, turmeric powder, chilli powder, cumin seeds and add the coarse paste to it.
- Mix well and lastly add salt to taste.
- Fry for a minute. Serve fresh with rice and curry of your choice.

How to make Ladies Finger Thoran Kerala style
1.Heat coconut oil in a nonstick/ Iron Tawa and crackle mustard seeds, cumin seeds and curry leaves.
2. When it crackles, add chopped onions and fry until they get transparent.
3. Further to the transparent onions, finely chopped ladies finger goes in. Fry in medium/simmer until they are fried well and roasted.
4. Finally grind coconut, turmeric powder, chilli powder and cumin seeds to a coarse paste. Add the paste to the thoran along with salt. The reason for adding salt is for a crispy fry. If you add them at the beginning, then the okra becomes sticky by leaving out water. Mix well and fry for a couple of minutes.
Serve fresh with rice and curry of your choice
