Veg Pulao recipe | Vegetable pulav in pan with step wise pics. Veg pulao is one of the preferred rice recipes in vegetarian menu. this pulav/pilaf/pulao however you call it as is very much mildly spiced and i first happen to taste it in Bangalore.
There are two kinds of pulav – white and yellow. this is yellow version of it with few masalas added and obviously turmeric powder. this recipe is a one pot recipe made in pan. if you wish to use pressure cooker, then it is the same method. Just add 2 cups water instead of 1.5 cups and pressure cook in simmer for 15 minutes.

step wise pics of making veg pulao:
wash and soak seeraga samba rice in water for 10-15 minutes.
heat oil + ghee in a pan and add cinnamon, cloves, cardamom, bay leaves, stone flower. fry till aroma arises.
add green chillies, chopped onions, mint leaves and fry until brown.
add ginger garlic paste and fry till raw smell goes off.
wash and chop mixed vegetables and add it to pan. fry for a minute. i have used carrots, peas, cauliflower and potatoes.
i have used chopped tomatoes and fry till mushy.
close and cook for 10 minutes. open and mix once.
add chopped coriander leaves, 1.5 cups coconut milk. usually we use only 1:1 ratio of water for seeraga samba rice but for this since we have used nearly 3 cups of vegetables – it is advisable to use 1.5 cups of thin coconut milk. You can also use plain water instead of thin coconut milk or in half ratio each. drain and add the soaked rice, salt.
also add turmeric powder and mix well. let it come to a boil first. then, close and cook in simmer for 10 minutes.
open and mix it up. serve hot with raita or salna.

- 3 tbsp oil
- 1.5 tbsp ghee
- 1 inch cinnamon
- 3 no cloves
- 2 no cardamom
- 2 no bay leaves
- 1 tsp fennel seeds
- 3 medium onion chopped
- 3 no green chilli slit
- 1 large tomato chopped
- 2 tbsp ginger garlic crushed
- 3 tbsp coriander leaves
- 3 cups mixed vegetables chopped
- 1.5 cups thin coconut milk
- 1/4 tsp turmeric powder
- salt to taste
