Vanjaram fish fry or vanjaram vepudu is spicy fish fry. Vepudu meaning fry. It is marinated with spices and shallots and pan fried until toasted on both sides.

This can also be deep fried but for the fact that it will consume more oil, it is better to go for pan fry.

Vanjaram fish is fleshy and has very less bones. Hence it is one of the best suited fish varieties for fry, porichathu, polichathu  and steamed fish recipes.

Directions for Vanjaram fish fry:

For marination:

Clean the fish, use fork and prick all the sides of fish to make tiny holes so that the marination gets in deeper.

Grind small onions, kashmiri red chilly powder, turmeric powder, pepper powder, ginger , garlic and salt to a fine paste. Apply this paste to the fish on all sides evenly using your hands. Rest it for 1 -2 hours refrigerated in a closed vessel.

The small onions used here is just for blending all the masalas, if the quantity used is more, then the fish will not get roasted. So, make sure to use only limited quantity of small onions.

Pan fry:

Heat oil in a wide pan, place the marinated pieces on it. cook on both sides until its toasted and turns brown.

Ingredients

  • 3 large pieces Vanjaram fish
  • 1/4 cup small onions
  • 1 1/2 tsp kashmiri red chilli powder
  • 1 tsp turmeric powder
  • 1 1/4 tsp pepper powder
  • 1 inch ginger
  • 3-4 cloves garlic
  • salt to taste

Instructions

To grind
