VADACURRY
Simple version of Vadacurry. For Usual vadacurry we need to soak the channa dhal for 3 hrs or more. In this one. I ve given my instant version of vada curry recipe.
Steam cook channa dhal if you have no time to soak it and then grind to paste with other spices. Make vadas and either deep fry them or if health specific then steam cook them again instead of deep frying. Never mind if its not going to be stiff. It gives additional flavour if its mixes easily with curry.

Ingredients:
Onion medium sized 2 nos finely chopped
Ginger garlic paste 1 tsp
Tomatoes 2 medium size finely chopped
Mustard seeds 1 tsp
Curry leaves 1 spring
Turmeric powder 1/2 tsp
Chilli powder 1 tsp
Corriander powder 2 tsp
Garam masala 1 tsp
Salt
Oil
Corriander leaves chopped 2 tsp
Bay leaf 1 no
Cinnamon stick small piece
Cardomom 1 no
Cloves 1 no
Coconut milk 1/4 cup
To grind:
Cooked Channa dhal half cup
Salt to taste
Turmeric powder 1/2 tsp
Chilli powder 1/2 tsp
Fennel powder 1/2 tsp
Cumin powder 1/2 tsp
Method:
1. Grind all the ingredients given under to grind section and make a fine paste. Make vadas out of it small sized and either deep fry in oil or steam cook for 10 min. Keep it ready.
2. Heat oil, crackle mustard seeds, throw in all the spices. Bay leaves, Cinnamon,cardomom and cloves.saute till fresh aroma arises.
3. Saute chopped Onions until pink. Add ginger garlic paste and saute until fresh smell goes off.
4. Add chopped tomatoes and all the remaining ingredients including salt. Mix well and saute until oil oozes out.
5. Now add the prepared vadas. If small sized put it as such or break them into pieces and add.
6. Add coconut milk and Give it a boil and add chopped corriander leaves. Serve hot for idlis and dosas.
