this is one of the better option apart from idli upma to use the leftover idlis. not everyone are fond of idli upmas and this is super hit at my home. do try it for your kids or for any party snack and even if not hot, it stays fresh. it is usually served with onion raita. 

I have used bell peppers, cabbage, beetroot, broccoli here in this recipe. the choice of vegetable is up to you. when using cauliflower or broccoli, chop it very finely so that it doesn’t stay odd man out in the dish.

Ingredients

  • 6 no idlis
  • oil for deep frying
  • 1 tbsp oil for sauteing
  • 1 tsp mustard seeds
  • 1 tbsp garlic chopped
  • 1 tbsp ginger chopped
  • 1 tsp green chilli chopped
  • 1 large onion chopped
  • 1 sprig curry leaves
  • 1/8 cup bell peppers
  • 1 large tomato chopped
  • 1 tbsp broccoli finely chopped
  • 2 tbsp grated cabbage
  • 2 tbsp beetroot chopped
  • salt to taste
  • 1/4 tsp turmeric powder
  • 1/8 tsp chilli powder
  • 1/4 tsp coriander powder
  • 1/4 tsp garam masala
  • 2 tbsp coriander leaves chopped finely

Instructions

  • cut the idlis to cubes and deep fry it in medium hot oil until crisp and brown. take it to a paper towel. 
  • heat oil in a pan and pop in mustard seeds, chopped ginger, chopped garlic, chopped green chillies and fry for 2-3 seconds, 
  • add onions, bell peppers and fry until onions are transparent. 
  • further add tomatoes, broccoli, cabbage, beetroot along with turmeric powder, chilli powder, coriander powder and garam masala.  
  • mix well, add water and let the vegetables cook until soft. 
  • mash it slightly and then add the fried idlis into it. 
  • mix well and cook for 2-3 minutes. 
  • lastly add chopped coriander leaves and mix again. 
  • serve hot with raita.

1.chop an idli to 9 pieces. keep the pieces ready

2. deep fry the pieces in medium hot oil until crisp and brown on edges. 

3. stir only after few seconds and keep turning sides to evenly roast the idli pieces. 

4. heat oil in a pan and splutter mustard seeds, chopped ginger, chopped garlic, chopped green chilli and fry for 2-3 seconds. 

5. add roughly chopped onions and bell peppers. saute till the onions are transparent. 

6. further add broccoli, tomato, cabbage, beetroot and mix everything together and fry for a minute. 

7. add 1 cup water for the vegetables to get cooked. also add salt, turmeric powder, chilli powder, coriander powder and garam masala. 

8. mix well and let it cook for 5 minutes until the vegetables are cooked. mash it slightly all over. 

9. put in the fried idlis and give it a good mix. 

10. finally add chopped coriander leaves. mix again and serve hot. 

serve hot with onion raita.
