Ros Omelette is a lesser-known but delicious Goan street food where a fluffy omelette is served with a flavorful chicken curry poured over it. The omelette, light and airy, soaks up the rich curry, creating a perfect blend of textures and flavors. Each bite is a mix of tender chicken pieces and the soft omelette, making it an ideal comfort food. Though popular in Goa’s streets, it’s easy to recreate at home and is a great way to enjoy a taste of Goan cuisine right in your kitchen. We had a lot of fun preparing it!

Chicken Xacuti Curry is a flavorful Goan dish made with a blend of roasted spices like coriander, cumin, and cloves, along with coconut, creating a rich and creamy curry. It’s a delicious, aromatic sauce with deep layers of spice, making it perfect to pour over a fluffy omelette in the Ros Omelette dish. The combination of tender chicken and the creamy, spice-infused curry gives every bite a burst of flavor. Chicken Xacuti is one of Goa’s iconic curries, and pairing it with an omelette elevates this street food to a heartier, more satisfying meal.

Ingredients:

  • 3 eggs
  • ½ onion, finely chopped
  • 1 tbsp coriander leaves, chopped
  • 1 green chili, finely chopped
  • ¼ tsp salt
  • 1 tbsp oil
  • Chicken Xacuti Curry (prepared in advance)
  • Extra chopped onions for garnish

Instructions:

  1. Prepare the Egg Mixture: Crack 3 eggs into a bowl. Add the finely chopped ½ onion, 1 tbsp of chopped coriander leaves, 1 green chili, and ¼ tsp of salt. Mix everything well and beat the eggs until they become light and airy.
  2. Cook the Omelette: Heat a pan and add 1 tbsp of oil. Once the oil is hot, pour in the egg mixture. Let it cook on medium heat until the bottom of the omelette is fully set and has risen slightly. Flip the omelette carefully and cook the other side until golden.
  3. Assemble the Ros Omelette: Transfer the cooked omelette to a serving plate. Ladle a generous amount of Chicken Xacuti Curry over the omelette, making sure the curry covers the omelette completely. Add 2-3 pieces of chicken from the curry on top.
  4. Garnish: Finish the dish by sprinkling some chopped onions on top for added crunch and freshness.

In a bowl, break 3 eggs

add all the ingredients to the bowl

beat it up

heat a pan and add brush oil

pour the mixture to the pan.

flip it over once the bottom is slightly cooked.

cook on the other side as well

serve it on a plate

chicken xacuti curry goes on top. you can replace it with any chicken curry of your choice

place 2-3 chicken pieces and chopped onions on top to garnish

serve it hot.

Beat the eggs well: Whisk the eggs until they are light and airy for a fluffier omelette that can absorb the Xacuti curry better.

Cook on medium heat: Ensure you cook the omelette on medium heat so it cooks evenly and doesn’t burn, giving a nice, golden finish.

Fresh curry for best flavour: Use freshly made Chicken Xacuti for a richer flavor and aroma, as the spices and coconut enhance the dish when freshly prepared. You can replace it with any curry of your choice.
