Mixed Vegetable Podi Sambar
Sambar is essential and most favorite recipe in south Indian Kitchens. Almost every kitchen has its own style and taste of making it. In my Kitchen, I use to cook Arachuvittathu (grinding all spices and adding it), using podi/powder without coconut , using sambar powder with Coconut & Tiffin sambar. This One is Mixed vegetable Podi Sambar without coconut.

You can use any vegetables of your choice, I have used carrots, drumstick, pumpkin & Beans. I have started using Sambar vadagam in my sambar after coming to Bangalore. I happened to know about adding vadagam to sambar from my maid who gives me instant tips always 🙂 I really am not sure how to make the vadagam but I got it online from Bigbasket. It gives an awesome aroma when u season your sambar with mustard seeds, asafoetida, curry leaves and this vadagam. But this one is optional, so am not going to include in my recipe down. If your able to get it online or in any local shops, Surely use it in your sambar.
Preparations:
- Cook the toor dal with water 1/2 : 2 ratio in cooker until its mushy. Smash it and keep it ready.
- Soak the Tamarind in warm water for 15 min.
- Chop all the vegetables along with Onions
If these three are ready, then making sambar is simple.
Directions:
- Heat oil in a deep kadai, splutter mustard seeds. Then add sambar vadagam(optional), asafoetida & curry leaves.
- Saute Onions until pink, saute tomatoes and then add all the vegetables, turmeric powder, salt and little water for the vegetables to cook. let it boil until the vegetables are cooked.
- Now add the soaked tamarind water, cooked and mashed dal, Sambar powder and adjust salt. Let it boil for 10-15 min in simmer. add water if necessary.
- Sprinkle ghee and chopped coriander leaves for garnish.

Ingredients
- 2 large sized Onions sliced
- 1 large sized Tomato chopped
- 1 large sized Carrot peeled and diced
- 2 medium sized drumstick with sambar cut
- 4-5 medium sized Beans chopped
- 1 cup white pumpkin chopped
- 1 tsp Mustard seeds
- 1 spring curry leaves
- 1/2 cup Toor dal cooked and mashed
- 1 tsp Sambar vadagam optional
- 2 tbsp sambar powder
- A pinch Asafoetida
- 1 tsp Ghee
