Ragi Pepper Crackers / Finger millet Pepper crackers also known as thattai or thattu vadai/ chekkalu/ nipattu. It is a traditional south indian snack mostly made on festive days. Crackers are one of those healthy snacks and if homemade can be given to toddlers as finger foods. I made this one for my DS who loved it.

One special tips is that, Those who love mayonnaise can have it spread on crackers for that “Yummmmyy” taste.

Ragi Pepper Crackers

Ragi Pepper Crackers Pictorial Directions:

Preparations:

  1. Soak chana dal (Kadalai Parupu) for at least 30 min.
  2. Grind fried gram(Pottukadalai) to fine powder.
  3. Slightly roast the peanuts and remove skin and roughly give a pulse and make it to coarse powder
  4. Grind peppercorns to powder separately. (Grind peanuts, peppercorns and fried gram separately as we need it in different texture)

    Directions:

  5. Take a bowl, put in Rice flour, Ragi flour (Rice and Ragi in equal ratio), Fried gram flour( from step2), Gram flour (kadalai maavu), Turmeric powder, salt and chilli powder.
  6. Mix well and sieve these flour to a mixing bowl.
  7. To this, add soaked and drained chana dal, coarsely ground peanuts, freshly ground pepper powder, chopped curry leaves,cumin seeds, sesame seeds and oil.
  8. Make a tight soft dough with very little water. Use extra oil if necessary.
  9. Make very small gooseberry size balls out of it.
  10. Place a tissue and then a neat cloth  over it. Place the balls on the cloth. This is necessary and important step as it absorbs all the excess moisture and you will get crispy thattais or it will end up soft.
  11. Grease your fingers with oil and flatten them to thin round.
  12. Prick them slightly with fork all over. (this is to avoid them getting puffed up like poori)
  13. transfer the flattened dough to back of ladle. Do not use hands. Push the cloth over the ladle and take them.
  14. Heat oil and in medium flame, fry them on both sides till dark brown (in batches).

  • 2-3 tbsp peppercorns Adjust according to your spice level

  • 1/2 cup Ragi flour
  • 2-3 tbsp gram flour
  • 1/2 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 spring curry leaves chopped
  • 1 tsp cumin seeds
  • 1/2 tsp sesame seeds
  • 2 tbsp oil for dough
  • salt per taste
