Pumpkin sambar recipe with step by step pictorial.
Sambar known also as sambhar is a lentil based curry cooked along with vegetable and tamarind extract. Any south Indian cannot live without it! May be an exaggeration, but it is the truth.
Even if your a follower of salads only diet, there could be a day when you badly wanted the sambar and crispy dosa? No south Indian can break up with Sambar. 🙂
There are so many variations of it in south India. Each Kitchen has its own special recipe.

Pumpkin sambar recipe:

Ingredients
- 3/4 cup tur dal
- 1/4 cup coconut pieces
- 2 tbsp sambar masala adjust according to its spice level
- 1 tsp mustard seeds
- 1 no green chilli
- 1/8 tsp asafoetida
- 2 medium onions chopped roughly
- 1 medium tomato chopped roughly
- 1 spring curry leaves
- 2 cups white pumpkin chopped
- 1/8 tsp turmeric powder
- salt to taste
Instructions
- Cook tur dal with enough water until it gets mashed. If in cooker, use 1 cup dal and 3 cups water and cook to 4 whistles.
- Heat 1/2 tbsp oil and roast the coconut pieces/grated coconut in simmer until reddish brown.
- Switch off and and sambar powder to it and mix well.
- Grind it to a smooth paste and keep it ready.
- Splutter mustard seeds, Green chilly and asafoetida. Fry for a minute
- add chopped onions, curry leaves and fry until brown
- once its brown, add the tomatoes and fry for a minute.
- Add the chopped vegetable(white pumpkin) , salt and turmeric powder. Mix well
- Pour little water and close and cook until vegetables are almost done.
- Now add the cooked dal and tamarind extract. boil for 5 more minutes in medium flame.
- Add the ground masala.Close and cook until it boils
