Potato podimas recipe chettinad style – urulaikizhangu podimas as we call it often is a south Indian potato mash which is cooked with some freshly ground masala. Generally had as a side dish with rice and curry. This is very common dish in all south Indian houses.

Ingredients
to grind raw
- ¼ cup grated coconut
- 3 cloves garlic
- 4 nos green chilli
- 1 tsp fennel seeds
- 1 tbsp fried gram
To make the podimas
- 1 tsp oil
- ½ tsp mustard seeds
- ½ tsp urad dal
- 1 small piece cinnamon
- 10-12 no small onions chopped
- 1 sprig curry leaves
- 4 medium potatoes boiled, peeled and cubed
- salt to taste
- ⅛ cup starch water/water collected from washing rice or replace with plain water
Instructions
- Cook the potatoes beforehand. boil, peel and cut them to large cubes.
- Grind all the ingredients mentioned under "To grind raw" to a coarse paste.
- Heat oil in a pan and crackle mustard seeds, urad dal and fry the onions until pink.
- further add curry leaves and cubed potatoes followed by freshly prepared masala and salt.
- mix everything together and add starch water.
- close and cook for 10 minutes on medium heat.
- Open after 10 minuets and let it cook until almost dry.
- serve hot with rice and curry.

Tips on cooking podimas
I have not cooked the potatoes until it is too mashy. have cooked just enough as we need to cook further with the masala. If it is too mashy at this stage, further cooking will make it like a curry.
Use freshly grated coconut for best taste in the curry
Yes, if you do not have starch water, replace it with plain water or take 1/2 tsp rice flour and mix it up with 1/8 cup water
Generally, turmeric powder is not added in podimas and looks white/cream in colour. If you prefer, you can cook the potatoes with turmeric and then peel off the skin.
It is mildly spiced and for 4 medium potatoes, we have added 4 green chillies which are mildy spicy. adjust the amount of green chillies as per your taste.

Firstly, lets grind the fresh masala needed for this dish. Blend together coconut, green chilli, garlic, fennel and fried gram to a coarse paste adding very little water.
In another pan, heat oil and crackle mustard seeds, urad dal, cinnamon stick.
When it crackles, add chopped small onions and fry for half a minute.
Once the onions start turning slightly brown, add curry leaves and boiled and cubed potatoes. I have not cooked the potatoes until it is too mashy. have cooked just enough as we need to cook further with the masala. If it is too mashy at this stage, further cooking will make it like a curry.
Add freshly prepared coconut masala and salt to the pan.
Mix everything together until well combined. Add 1/4 cup starch water or the water collected from washing rice. close and cook in medium heat for 10 minutes.
Open and cook until all the moisture is left and stir inbetween.
serve the potato podimas with rice and vathakulambu .
