- 1 tsp oil
- 1 tsp mustard seeds
- 3/4 tsp urad dal
- 1/2 tsp cumin seeds
- Fenugreek seeds (a few)
- 2 broken red chillies
- 2 green chillies (slit)
- 1 spring curry leaves
- 2 garlic cloves (chopped)
- 1 onion (finely chopped)
- 1 tomato (chopped)
- 1 tsp salt
- 1 ridge gourd (chopped into cubes)
- 1/4 tsp turmeric powder
- 1 tbsp tamarind paste
- 1.5 cups water
- 2 tsp kulambu milagai podi (spice mix)
- Chopped coriander leaves
Instructions:
- Tempering Aromatics:
- Heat 1 tsp oil in a mud pot.
- Add 1 tsp mustard seeds. When they splutter, add 3/4 tsp urad dal, 1/2 tsp cumin seeds, fenugreek seeds, 2 broken red chillies, 2 slit green chillies, and a spring of curry leaves.
- Mix everything and sauté for a few seconds.
- Sautéing Vegetables:
- Add 2 chopped garlic cloves and fry for a minute.
- Introduce 1 finely chopped onion and fry until it softens.
- Add 1 chopped tomato and cook until it becomes mushy.
- Cooking Ridge Gourd:
- Sprinkle 1 tsp salt, mix, and cook until the mixture becomes mushy.
- Add 1 chopped ridge gourd, 1/4 tsp turmeric powder, and cook for a minute.
- Pour in 1 tbsp tamarind paste and 1.5 cups of water.
- Mix everything, close the pot, and cook for 10-15 minutes.
- Adding Spice Mix:
- Open the pot and add 2 tsp kulambu milagai podi.
- Mash everything together and let it cook for another 5 minutes.

- Add chopped coriander leaves and mix well.
