Paneer fried rice recipe step by step pictures:
firstly, soak the basmati rice in water for 15-30 minutes. heat water in a pot and add cumin seeds and few drops of oil in it. let it come to a rolling boil. now simmer and add the soaked rice to it.
cook in medium flame for 10-15 minutes or until the rice is done. rice has to be easily breakable but not mushy. strain it and let it cool completely. to cool it faster, pour in some chilled water on it so that it stops cooking further as well cools down faster. this way the rice will have a beautiful texture in the final dish.
heat oil and add chilli powder, garam masala, pepper powder and mix well. add paneer cubes into it and fry well in medium heat. stirring and turning over the sides so that all sides are roasted.
let all the sides get roasted. take it to a plate and keep it aside until use.
in same pan, fry garlic, chopped onions, green chillies chopped and fry till slightly brown.
add finely chopped bell peppers. you can just just the capsicum if you dont have red and yellow bell peppers. mix well and cook in medium heat until it is crunchy but cooked.
now add salt, pepper powder, tomato sauce, soya sauce, sugar and mix well. if you have cooked the rice with salt, keep that in mind while adding salt to the vegetables.
lastly, add spring onions, garam masala and mix well. fry till raw smell of masala goes off.
furthermore, add the cooked rice, mix gently.
add fried paneer cubes and mix again. serve hot with tomato sauce.
