Mutton roast recipe Kerala style – also known as mutton peralan or mutton kurumulak varattiyathu is a popular Kerala style mutton fry. A spicy pepper flavored dish that can be had as a side dish for rice and as a starter.
While some of the peralan recipe calls for grinding masala and then cooking mutton with the masala. this is another method of it which has been adapted in my house.

Mutton peralan recipe
Ingredients
- 1/2 kg mutton chopped
- 1 tsp turmeric powder
- 3/4 tbsp chilli powder
- 1 tbsp coriander powder
- 1/2 tsp ginger garlic paste
- salt to taste
- 1 tbsp coconut oil
- 1 piece bay leaf
- 1 piece cinnamon
- 4-5 cloves garlic crushed
- 12-15 no small onions sliced
- 1 medium onion sliced
- 1 large tomato chopped
- salt to taste
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- 1 no green chilli slit
- 1 tbsp pepper powder
- small piece banana leaf optional
Instructions
- In a pressure cooker, add mutton pieces, turmeric powder, chilli powder, coriander powder, ginger garlic paste and mix well.
- add water until mutton pieces get immersed and add salt to taste.
- mix well and pressure cook for 4-5 whistles.
- Meanwhile, heat oil in a kadai, add bay leaves and cinnamon.
- crush the garlic and add to the pan. saute till aromatic.
- further add small onions and fry until slightly brown.
- when the small onions start turning brown, add big onions and fry till slightly brown.
- At this stage, add tomatoes, salt and fry till mushy.
- add turmeric powder, coriander powder, and mix well.
- pour the cooked mutton along with the broth. optionally, take out a cup of broth for soup/rasam.
- let it cook further on high heat until all the masala is dried up.
- add slit green chilli and freshly crushed pepper powder.
- mix well and cook for a minute or two.
- close the mutton with banana leaf and cook further for 5 minutes in simmer.
- put off flame and serve hot with rice and curry of your choice.

How to make Mutton pepper fry Kerala style
Firstly, In a cooker, take clean mutton pieces, turmeric powder, coriander powder, chilli powder, and ginger garlic paste.
mix well and add water until the pieces immerse.
Add salt and mix again. Close and pressure cook for 4-5 whistles. We need not worry about cooking the mutton completely. As we will be cooking further until dry.
Heat oil in a kadai, add bay leaf and cinnamon. Add crushed garlic and fry until aromatic.
Further, add sliced small onions and fry until slightly brown.
Furthermore, add sliced big onions and fry again until it browns slightly.
Further, add chopped tomatoes and salt. fry until mushy.
furthermore, add turmeric powder, coriander powder and mix well.
Pour in the cooked mutton along with the broth. Take out 1 cup broth to be had as soup or to make rasam.
Let the mutton cook further on high heat until all the masala is drained.
Lastly, add pepper powder and green chilli slit. Mix well and cook further for a minute or two.
Close the kadai with a banana leaf and cook for 5 minutes in simmer. put off. open after few minutes.
serve hot with rice and curry.
