  • 6-7 mulberries (fresh or soaked if dried)
  • 1/8 tsp lemon zest
  • 1/2 tbsp lemon juice
  • 1/4 tsp vanilla essence
  • Pinch of salt
  • 1/8 cup desiccated coconut (plus extra for rolling)

Instructions

  1. Grind Cashews: Begin by grinding 1/2 cup of cashews into a coarse powder using a food processor. Avoid over-grinding to prevent the cashews from turning into butter.
  2. Add Ingredients: To the ground cashews, add 6-7 pitted dates, 6-7 mulberries, 1/8 tsp lemon zest, 1/2 tbsp lemon juice, 1/4 tsp vanilla essence, and a pinch of salt. If using dried mulberries, soak them in hot water before adding.
  3. Pulse Grind: Use the pulse mode of your blender or food processor and blend the mixture 4-5 times. This will ensure that all the ingredients are well combined without over-blending.
  4. Incorporate Coconut: Add 1/8 cup desiccated coconut to the mixture and pulse a few more times to mix it evenly.
