Simple bri recipe that helps for a busy day breakfast.

Ingredients:
Brinjal cut into cubes 1 cup
Onion 2 medium nos sliced
Tomato 1 no finely chopped
Garlic 2 pods chopped finely
Curry leaves 1 spring
Mustard seeds 1 tsp
Urud dhal 1 tsp
Bengal gram 1 tsp
Potato 1 no cubed ( optional )
Turmeric powder 1 tsp
Chilli powder 1 tsp
Sambar powder 1 tsp
Salt to taste.

Method:
1. Heat oil in cooker, splutter mustard seeds. Crackle urud dhal and bengal gram till it starts changing color.
2. Saute sliced onions,Garlic and curry leaves.
3. Once onions turn pink add tomatoes and saute well.
4. When tomatoes are mushy. Go with adding rest of ingredients including brinjal and potato.
5. Add little water approximately 1 cup and cook to 3 whistles.
6. Mash well and Garnish with chopped corriander.
