  • 1.5 litres skimmed milk
  • 1 cup sugar

Instructions:

  1. Prepare the Milk Mixture:
    • In a thick-bottomed vessel or non-stick pan, pour in the skimmed milk.
    • Keep the flame on medium and continuously stir the milk to prevent it from sticking to the bottom.
    • As the milk simmers, scrape the cream from the sides and stir it back into the milk.
    • Place a wooden ladle across the top of the pan to prevent spillage.
    • Allow the milk to reduce completely, which may take around 1 to 1.5 hours. Stir occasionally to ensure it cooks evenly.
  2. Forming the Milk Solids:
    • Once the milk has thickened and become solid like halwa or palkova, let it cool down slightly.
    • Transfer the milk solids onto a plate and allow them to dry under the sun for at least one day.
  3. Grind to Powder:
    • Once the milk solids are completely dry, grind them into a fine powder using a blender or mixer grinder.
    • Add 1 cup of sugar to the powder and blend it again to ensure it mixes well.
  4. Sieve and Store:
    • Sieve the milk powder to remove any lumps and ensure a smooth texture.
    • Transfer the powdered milk into an airtight container for storage.
    • Use within 3-5 days if stored at room temperature, or refrigerate for up to a month.
