Ingredients:

  • 1/2 cup jaggery
  • 3/4 cup milk
  • 1 ripe banana, chopped
  • A few drops of vanilla essence
  • 1 clove
  • 3 dates, deseeded
  • 1/4 cup butter, at room temperature
  • 3/4 cup health mix powder
  • 3/4 cup wheat flour
  • 2 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • A pinch of salt
  • Chopped nuts (almonds) for topping

Instructions:

  1. Prepare the Batter:
    • In a blender, combine jaggery, milk, chopped banana, vanilla essence, sugar, cloves, dates, and butter.
    • Blend until you get a smooth paste and transfer it to a mixing bowl.
  2. Combine Dry Ingredients:
    • To the bowl, add health mix powder, wheat flour, cocoa powder, baking powder, baking soda, and a pinch of salt.
    • Mix well and sieve the dry ingredients into the same bowl.
  3. Mix the Batter:
    • Gently cut and fold the dry ingredients into the wet mixture until well combined.
  4. Preheat and Prepare the Pan:
    • Preheat your oven to 180°C (350°F).
    • Line a bread pan with butter paper and pour the batter into it.
  5. Add Toppings:
    • Sprinkle chopped nuts (almonds) on top of the batter and lightly tap the pan to settle the mixture.
  6. Bake the Cake:
    • Place the pan in the preheated oven and bake for about 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Once baked, remove the cake from the oven and allow it to cool completely.
    • Demould the cake, slice it into pieces, and serve.

Additional Tip:

  • For enhanced flavor, dry roast the health mix powder for a few seconds before using it in the recipe to eliminate any raw smell.
