Am very much fond of this chicken kabab which we use to have it almost 2-3 times a week in bangalore. Its a small street food shop, they prepare marinated chicken well ahead and deep fry them and toss it with little pepper. paired with mint chutney and sliced onions. It is super awesome food and i never felt that unhealthy as it absorbed very little oil and was freshly and hygienically made in front of us. I always had a feel of that grilled kabab taunting me which i was not a great fan of. these deep fried ones became my favourite.

In this recipe, it is best to marinate the chicken for at least a minimum of 3-4 hours. If making it for evening snack or dinner, then prepare it in the morning and refrigerate it. Take out and immediately fry them.

Fried Chicken Kababs recipe
Ingredients
- 1/4 cup maida
- 1/8 cup corn flour
- 2 tbsp rice flour
- 1/4 tsp turmeric powder
- 3/4 tsp chilli powder
- 1 tsp kashmiri chilli powder
- 1/8 tsp amchur powder
- salt to taste
- 1.25 tbsp ginger garlic paste
- 1/8 tsp garam masala
- 10-15 medium chicken pieces
Instructions
- Take maida, rice flour, rice flour, turmeric powder, chilli powder, kashmiri chilli powder, ginger garlic paste, garam masala and amchur powder in a bowl.
- Add water and mix well until it is smooth
- add the clean chicken pieces and Mix well
- refrigerate for 3-4 hours or overnight
- deep fry them in hot oil in medium flame
- fry on all the sides until they turn golden brown. take out and strain in paper towel

- Add water and mix well until it is smooth. Add water little at a time to avoid adding too much water.
- Mix well and water again in intervals.
- Just enough water has to be added to make the thick paste of it.
- add the clean chicken pieces with bone
- Mix well so that masala is well coated in chicken
- refrigerate for 3-4 hours or overnight
- deep fry them in hot oil in medium flame
- fry on all the sides until they turn golden brown
- take out and strain in paper towel
