cauliflower pepper fry recipe | cauliflower milagu varuval recipe. a.k. a cauliflower milagu pirattal is an easy to make, simple recipe with pepper spice mix flavored stir fry. that will go with rice as a side dish.
this is not a deep fried recipe and so i can call it a healthier version of pepper cauliflower. i like pepper flavour on cauliflower. especially when some one in family is down with cold, i make this. this is one of the best vegetarian alternate to pepper chicken.

Ingredients
- 2 cups cauliflower florets
to grind coarsely
- 1 tbsp cumin seeds
- 2 tbsp peppercorns
- 4-5 no garlic cloves
- 1/2 inch ginger
- 1 sprig curry leaves
- 1 tsp fennel seeds
to make the stir fry
- 2 tsp oil
- 1 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 sprig curry leaves
- 1/2 cup onion chopped
- 1 large tomato chopped
- salt to taste
- 1/2 cup water
- 2 tbsp coriander leaves
Instructions
- grind everything given under “to grind coarsely” to a coarse powder.
- clean the cauliflower florets and put them in a bowl of hot water with turmeric powder for 15 minutes.
- strain it and add the coarse pepper spice mix to it and mix well. set it aside
- heat oil in a pan and crackle mustard seeds and cumin seeds.
- further add chopped onions and fry till slightly brown.
- chop the tomatoes and add it to the pan. fry for a minute.
- to this onion tomato mixture, add the marinated cauliflower pieces, salt and 1/2 a cup of water.
- close and cook until the cauliflower is soft. may take 10-15 minutes.
- open and let it dry on high flame until slightly roasted and colour changes from brown to black.
- lastly add chopped coriander leaves and serve hot with rice and curry.

1.clean the cauliflower florets and soak them in hot water along with a tsp of turmeric powder. let it sit undisturbed for 10 -15 minutes. strain it and discard the water. this process is to be followed for any dish using cauliflower as it has a lot of worms hidden. washing it will not clean them all.
2. now, lets prepare the pepper spice mix. grind cumin seeds, peppercorns, ginger, garlic, curry leaves and fennel seeds to a coarse mix.
3. mix the spice powder to the cauliflower. slight moisture in the cauliflower will hold the pepper mix. also the marination helps to absorb pepper flavour in cauliflower.
4. meanwhile, heat oil in a pan and crackle mustard seeds, cumin seeds. add curry leaves, onions and fry till transparent.
5. add chopped tomatoes and fry in medium heat for a minute.
6. at this stage, add the cauliflower along with the spice mix used for marination. salt and 1/2 a cup of water.
7. mix well. close and cook for 10-15 minutes or until the cauliflower is soft.
8. open and if there is any water left behind. dry them out in medium heat while stirring in between. the colour changes to dark brown/black gradually.
9. lastly, add chopped coriander leaves and mix well.
10. serve hot with rice and curry. I made sorakkai kootu /mulakushyam / bottle gourd dal curry to go with rice.
