Capsicum rice recipe | Capsicum pulao recipe | Bell pepper rice is super simple and easy to cook mildly flavored rice recipe. just an addition of few ingredients to the cooked capsicum and rice and can be one of the best option for the lunch box especially for kids.
using all the three colors of bell peppers makes it more colorful but in case you cannot source red and yellow, just replace it with green.

heat oil in a pan and add chopped garlic and chopped green chillies and also chopped onions.
fry until brown and then add all the three colors of chopped bell peppers.
fry for a minute and then add mixed herbs, pepper powder and cashew paste. mix well. need not fry for long. just sprinkle little water if it is scorching to the bottom.
add enough salt for the vegetables and rice. cook the basmati rice before hand. Rice has to be non sticky and just cooked and not over cooked. add the rice and mix it up well and gently.
serve the capsicum pulao hot with sauce

Ingredients
- 1 tbsp oil
- 1 tsp garlic chopped
- 1/2 tsp green chilli chopped
- 1/8 cup onion chopped
- 6 tbsp bell peppers green, yellow, red (2 tbsp each)
- 1/4 tsp mixed herbs

- 1/8 cup cashew paste
- salt to taste
- 1.5 cups cooked basmati rice
