Pomegranate Burfi or Anar ki burfi is a special variation to normal coconut burfi recipe. Pomegranate juice is added while cooking burfi at a specific stage and cooked to this beautiful, tastiest sweet.

I just loved this burfi even though it dint look appetizing. It came out just perfect that 10 minutes after the shoot, I saw only an empty plate on my counter. everyone in my family loved the taste.

pomegranate burfi

Ingredients

  • 1 cup coconut grated
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • 2 tbsp coconut oil
  • 2 tbsp pomegranate juice

Instructions

  • Keep a pan greased /lined with baking sheet ready!
  • Heat a pan, add grated coconut, sugar, cardamom powder, coconut oil and mix well. Let it come together
  • At this stage, add little water to it, mix well and let it boil
  • When it starts boiling, add pomegranate juice and mix well
  • Mix briskly until it froths on top
  • Switch off and pour it immediately onto the greased pan/tray
  • tap it gently and let it sit for a minute or two
  • Now make slices and let it cool down completely before you can remove the sliced pieces.
