Stuffed Bottle gourd curry | Lauki Musallam
Stuffed Bottle gourd curry or Lauki Musallam is very special gravy where Bottle gourd is stuffed with an exclusively prepared spicy malai stuffing and simmered in an onion tomato curry.
This is an easy curry to prepare which can be had as side dish for any Indian Breads. aromatic curry with bottle gourd and the simple onion tomato curry base which gets infused in the bottle gourd stuffing and gives out an unique flavor.
Sorakkai Kootu is one of the very common dish of tamilnadu made with bottle gourd and lentils.

Ingredients
Preapring Lauki
- 1 medium bottle gourd
- 1/4 tsp turmeric powder
- 1/2 tsp chilli powder
- 1/2 tsp salt
For the Filling
- 2 large potatoes boiled and mashed
- 1 tsp chopped dry grapes and cashews
- 2 tbsp khoya
- 1 small green chilli chopped finely
- 2 tbsp desiccated coconut
- 1 tbsp milk powder
- 3/4 tsp chilli powder
- 1/8 tsp amchur powder
- 1 pinch asafoetida
- 3/4 tsp salt
- 1 tsp water
For curry
- 1 tsp cumin seeds
- 1 large onion finely chopped
- 1 tsp ginger garlic paste
- 1 large tomato finely chopped
- 1/2 tsp chilli powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 2 tbsp curd
- 2 tbsp fresh cream
Instructions
- Wash the bottle gourd and slice them into 2 or 3 pieces. Gently Remove the inner white flesh.
- Boil 3 cups water in a pan, Add Turmeric powder, Chilli powder and salt to it and mix well. Put in the lauki pieces in it. Close and cook until the pieces are half cooked. (If cooked more than that then it make break while stuffing) It has to be firm but slightly cooked.
- Turn over the pieces inbetween and cook again. cook Approximately for 10 minutes. Take it out and keep it aside to cool
- Stuffing/Filling:In a mixing bowl, add Boiled and smashed potatoes, Chopped dry grapes and chopped cashews, Khoya, Green chillies chopped, Desiccated coconut, Milk Powder, chilli powder, salt, asafoetida and amchur powder.
- Sprinkle little water and make a smooth dough. Filling is ready
Filling the lauki
- Gently fill the lauki with the stuffing prepared. Slice the Laukis 1-2 " wide and set it aside.
For the curry
- Heat oil in a pan, crackle cumin seeds
- Add onion chopped and ginger garlic paste. Fry till onions are slightly brown.
- Now, add chopped tomatoes, chilli powder turmeric powder and coriander powder.
- Fry for a minute until tomatoes are mushy
- Add salt and mix well. Pour in water and mix again. Close and cook for 5 minutes
- Place the stuffed laukis in curry. Close and cook in simmer for 2 minutes
- Open and add curd and fresh cream, turn over the laukis and cook again for 2 more minutes.

- Goes in Khoya (Unsweetened Khoya)
- For spiciness, we add Green chillies chopped
- Desiccated coconut is added. If you do not have desiccated coconut, add freshly grated coconut. But in that case you need not add water to make it a dough. The moisture int eh freshly grated coconut is enough to make dough
- Furthermore, add Milk Powder. Adding milk powder is optional.
- Add chilli powder, salt, asafoetida and amchur powder.
- Sprinkle little water and make a smooth dough. Filling is ready
