Arachuvitta Chicken curry is a traditional method of sautéing all spices and grinding it with the help of ammikal/grinder stone manually and cooking curry.

The taste of manually grinding the masala cannot be compared to any ready masalas! That authentic flavor and spice just tempts easily.

Arachuvitta chicken curry and Pollachi Chicken curry is very similar but for the tiny changes in method of cooking. Grinding it manually takes it a step higher than the usual curry.

Arachuvitta Chicken Curry – Pictorial description:

  • Dry roast Cinnamon, cloves, cardamom, peppercorns, cumin seeds, fennel seeds
  • Dry roast until aromatic and keep it aside
  • Heat oil in same pan, Put in coriander seeds and red chilli. Sauté till aromatic and Take it along with the sautéed spices.
  • Sauté again Ginger, garlic and green chilli for a minute
  • Add curry leaves
  • Put all sautéed spices together and mix. Add Coconut pieces.
  • Grind to a fine paste. Add little water and make it saucy.
  • Heat ghee and drop in cumin seeds.
  • Sauté onions until pink
  • Add tomatoes and cook until mushy
  • Drop in Chicken, turmeric powder, salt, ground masala and water.
  • Mix well and pressure cook for 4-5 whistles.

Ingredients

  • 1/2 inch cinnamon
  • 2 no cloves
  • 1 cardamom
  • 1 tsp peppercorns
  • 1 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 2 tbsp coriander seeds
  • 5-6 red chillies
  • 2 inch ginger
  • 3-4 garlic cloves
  • 1 green chilli
  • 1/8 cup coconut pieces
  • 3 tbsp ghee
  • 1/4 tsp cumin seeds
  • 1 large onion finely chopped
  • 1/4 tsp turmeric powder
  • 1/2 kg chicken
