Chakka Varattiyathu is Jackfruit preserve. Jackfruit cooked and simmered with jaggery and ghee to a thick sweet preserve consistency. It can be stored up to a year and used in making many sweet dishes like Appam, Ela ada, Payasam, Sweet Kozhukattai and many more recipes.Chakka Varattiyathu

In this, Jackfruit season we make this preserve and store it to make such delicacies in future. It has to be thickened like jam if we are going to use it for almost a year. If we are using it in a couple of months, then need not thicken it too much.

This process of making the preserve will take around 1 week where everyday we take out the preserve from fridge and heat it up in simmer with ghee and let it get thicken. But this recipe, includes the process for one day and if you want to store it for longer time, then heat it up for 15 – 20 min everyday for a week until it gets thickened. Just a spoonful is enough to make desserts.

Peel the fully ripe jackfruit. Seeds not required just the Avris(Chola). Pressure cook it with very little water to 3-4 whistles.

Cool and Grind it to a paste

Add jaggery and mix well

Add ghee little at a time and stir

Heat it up in simmer while stirring in between (Add little ghee each time we stir it)

Colour starts changing and it gets thickened.

When you reach the consistency required, stop it.

Cool and transfer to a Air tight container and store it in refrigerator.Chakka Varattiyathu

  • 1 Large Jackfruit Fully ripe
  • 4 cups jaggery
  • 2-3 cups ghee
