Sukka Masala Powder:
- 1/2 tsp cumin seeds
- 1/2 tsp fennel seeds
- 1 tbsp coriander seeds
- 1 tsp peppercorns
- 1/2-inch cinnamon stick
- Tiny piece of black stone flower
- 2 cloves
- 2 tsp Kashmiri chili powder
- 1/2 tbsp coriander powder
Main Ingredients:
- 400 gms Oyster mushrooms (leafy mushrooms)
- 1 tbsp coconut oil
- 1 onion, finely chopped
- 1 tbsp ginger garlic paste
- 1 spring curry leaves
- 1 tomato, chopped
- 1 tsp salt
- 2 tbsp coconut pieces
- 1/2 tsp turmeric powder
- 1 tsp soya sauce
- Chopped coriander leaves for garnish
Instructions:
- Prepare Sukka Masala Powder:
- Dry roast cumin seeds, fennel seeds, coriander seeds, peppercorns, cinnamon stick, black stone flower, and cloves until they smell nice.
- Blend them with Kashmiri chili powder and coriander powder to make Sukka Masala Powder.
- Cooking the Mushroom Sukka:
- Heat coconut oil in a pan and add chopped onion. Cook until golden.
- Add ginger garlic paste and cook until it smells good.
- Throw in curry leaves and chopped tomato, and cook until the tomatoes are soft.
- Incorporate Oyster Mushrooms:
- Add Oyster mushrooms and Sukka Masala Powder to the pan.
- Sprinkle salt and mix well.
- Enhance with Coconut:
- Add coconut pieces and cook for 10 minutes with the lid on.
- Final Touches:
- Stir in turmeric powder and soya sauce, and cook for 5 more minutes.
- Garnish and Serve:
- Top with chopped coriander leaves and enjoy with rice or roti!
