Ingredients:

  • 1 tbsp butter
  • 1 tbsp chopped garlic
  • 1 green chilli, chopped
  • 1 onion, finely chopped
  • 2 tbsp chopped capsicum
  • 100 gms mushrooms, sliced
  • 1/4 tsp salt (for mushrooms)
  • Few drops of soy sauce
  • 1/4 tsp pepper powder (plus more for garnish)
  • 1/8 tsp pasta seasoning
  • 2 cups cooked basmati rice
  • A pinch of salt (for rice)
  • Chopped spring onions
  • Lemon squeeze

Instructions:

  1. Sauté garlic , onion and green chilli:
    • In a pan, melt 1 tbsp butter and add 1 tbsp chopped garlic. Fry for half a minute until aromatic.
    • Add 1 chopped green chilli and fry for another moment.
    • Introduce 1 finely chopped onion and fry until it turns pink.
  2. Add Vegetables and Mushrooms:
    • Toss in 2 tbsp chopped capsicum. quickly saute on a high flame.
    • Add 100 gms sliced mushrooms, 1/4 tsp salt, and fry until the mushrooms shrink in size.
    • Sprinkle a few drops of soy sauce, 1/4 tsp pepper powder, and 1/8 tsp pasta seasoning. Mix everything together.
  3. Combine with Cooked Rice:
    • Add 2 cups of cooked basmati rice to the pan.
    • Sprinkle a pinch of salt and add chopped spring onions.
    • Toss the pan without mixing too much. Ensure the rice is coated with all the spices evenly.
  4. Close and Cook:
    • Close the pan and cook on a low flame for 2 minutes.
    • Open and gently mix once.
  5. Finish and Serve:
    • Lastly, add a squeeze of lemon and some more pepper powder to taste.
    • Mix well and serve the Mushroom Pepper Rice hot.
