Ingredients:
For the Masala Base:
- 1.5 tsp oil
- 1-inch cinnamon
- 2 cloves
- 1 tsp fennel seeds
- 2 finely chopped onions
- 1 tsp ginger-garlic paste
- 2 tomatoes (crushed)
- 1 tsp turmeric powder
- 1 tsp chilli powder
- 2 tsp coriander powder
- 3/4 tsp cumin powder
- Water (as needed)
- Salt to taste
- 1 tsp Kashmiri chilli powder
- 1/2 tbsp egg curry masala
- 2-3 tbsp oil (for frying eggs)
- Chopped coriander leaves (for garnish)
For the Coconut-Cashew Paste:
- 1/4 cup coconut
- 8-10 cashews
- 1 tsp poppy seeds
Instructions:
- Prepare the Masala Base:
- Heat 1.5 tsp oil in a pan.
- Add cinnamon, cloves, fennel seeds, and finely chopped onions. Fry until pink.
- Continue cooking until the onions turn slightly brown.
- Add ginger-garlic paste and fry until the raw smell disappears.
- Mix in crushed tomatoes and cook until soft.
- Add turmeric powder, chilli powder, coriander powder, and cumin powder. Fry until the masala comes together.
- Prepare the Coconut-Cashew Paste:
- Grind coconut, cashews, and poppy seeds to a fine paste.
- Incorporate the Coconut-Cashew Paste:
- Once the masala is well-cooked and oil is released, add the prepared paste along with water used to wash the mixer.
- Mix well and add 1/2 cup water if required. Add salt and Kashmiri chilli powder. Mix again.
- Incorporate egg curry masala (1/2 tbsp) and cook on high heat for 10 minutes.
- Fry the Eggs:
- In a separate pan, add 2-3 tbsp oil, a pinch of turmeric powder, and 1/2 tsp chilli powder.
- Make slits in 7 boiled eggs and fry them in the spiced oil until well-roasted on all sides.
- Once brown spots appear, add the eggs along with the oil to the curry. Alternatively, you can skip the oil and add just the eggs.
- Finish the Curry:
- Mix well and close cook for 5 minutes on low heat.
- Open, add chopped coriander leaves, and serve hot.
