- 1/2 tbsp sambar powder
- 1 sprig curry leaves
- Oil (as needed for roasting)
Instructions:
- Preparation: Heat 1 tsp of oil in a kadai (pan). Add mustard seeds, urad dal, and cumin seeds. Allow them to splutter.
- Aromatics: Add finely chopped onions and crushed ginger-garlic to the pan. Fry for a minute or until the raw smell disappears.
- Vegetable Mix: Incorporate the cauliflower and potato into the pan. Sprinkle salt, turmeric powder (1/4 tsp), and chilli powder (1 tsp). Mix the vegetables well to coat them with the spices.
- Cooking Process: Pour in 1 cup of water, cover the pan, and let the vegetables cook until they become soft. Once cooked, uncover and allow the excess water to evaporate.
- Flavor Infusion: Add sambar powder (1/2 tbsp) and a sprig of curry leaves to the mixture. Mix well and continue cooking on low flame until the vegetables are well-roasted. If needed, add a little oil for extra richness.
