Chakka Pradhaman – Jack fruit pudding~Payasam
Chakka pradhaman is Jackfruit cooked in the flavor of jaggery and coconut milk.
Chakka pradhaman is one of the special dessert item served in sadhya.
Chakka pradhaman is prepared in two ways,one with the chakka varatti which is the jackfruit jam prepared exclusively for pradhamans and appams. This one is freshly prepared. chakka varatti is prepared by caramelizing jackfruit with jaggery syrup and we usually store it in air tight container for even months.
But i prefer this one, freshly prepared and the chunks of jackfruit in the dessert is the highlight of this recipe.
It is in this vishu festive season that every malayali home you enter today , you never miss the chakka manam(smell). Wahh…how much ever fruits are arranged for kani, chakka will be the hero.

Directions:
Clean the jack fruit, chop individual chola to small pieces.
Boil them with water in a closed vessel or pressure cook to 4 whistles.
Grind it coarsely. The chunks you get in between the drink makes it tasty.
Meanwhile Melt the jaggery with little water. Filter it and keep it ready.
Transfer the ground jack fruit to thick bottom vessel and add the jaggery syrup.
Mix well and let it cook for 15 min in simmer.
While it cooks, fry the coconut pieces in ghee and keep it ready.
Also prepare the fresh coconut milk.
Mix coconut milk to the jaggery jack fruit mixture and mix well. Keep stirring.
When it starts to thicken switch it off. Add the fried coconut pieces and mix well.
Finally add a tsp ghee and serve the delicious pradhaman.

- 1/4 th of medium sized jackfruit
- 1 - 1/1/2 cup Jaggery
- 2 cups coconut milk
- 1/4 cup coconut pieces
- Ghee
