Aloo Gobi Dry Recipe Dhaba Style | aloo gobhi ki sabji | aloo gobi masala dry
Aloo gobi Dry is a simple yet popular restaurant/ dhaba dish made without yogurt, cream, or coconut. It is made semi dry or in gravy consistency and is a little spicy dish. Aloo Gobi’ (आलू गोभी) is a very basic vegetable curry that goes with roti/phulka or ghee rice.

►►Ingredients
- Oil – 2 tbsp
- Cauliflower florets – 1 cup
- Potatoes chopped – 1 cup
- Salt to taste
- Cumin – ½ tsp
- Onion – 1 no chopped
- Ginger garlic paste – ½ tsp
- Tomatoes – 1 no, chopped
- Salt to taste
- Turmeric powder – ¼ tsp
- Chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Garam masala – ¼ tsp
- Green peas – ½ cup
- Water – ½ cup – 1 cup
►►Instructions
- Heat oil and fry the chopped potatoes and cauliflower florets with salt until slightly roasted.
- Take the fried vegetables to a plate and keep it aside until use.
- In the same pan, crackle cumin seeds. Add extra oil only if needed.
- When the cumin crackles, add chopped onions and fry until soft
- Further add ginger garlic paste and fry until the raw smell leaves.
- Put in the chopped tomatoes and salt enough for frying. Fry the onion tomatoes for a minute and close cook for 3-5 minutes on medium heat until the tomatoes are cooked and mushy.
- By now, oil leaves out the onion tomato masala. Mash the mixture completely.
- Add all the masalas and fry for a couple of minutes on a medium heat.
- When the oil leaves out the masala, add peas, salt and water.
- Close cook for 5 minutes or until peas is well cooked.
- Open and mash the peas slightly.
- Put in the fried potatoes and cauliflower and cook it along with the masala until it is semi dry.
- Serve it hot with roti or phulka or ghee rice.
