Kalan masala | roadside kaalan recipe is popular street food in Tamil Nadu, especially in the kongu region. In Coimbatore, oysters and button mushrooms have almost become a staple dish.
In Coimbatore, There are a few well-known street shops out of which a shop in the air force road, left on the way from Sungam is a shop where Kalan is very famous. especially the “Mutta Kaalan” (Egg mushroom) is too good.
Making of this roadside kaalan recipe has majorly two steps, one is to deep fry the mushroom batter and keeps it ready. The shops prepare them beforehand and keep them on display. When the order is placed, the next step of mixing the fried mushroom with the masala base is done.
It is so much interesting to watch how fast and beautifully they prepare in street side shops. It will be super duper hot and one needs to eat it right that way, It will never taste so good if it cools down. Every time I have this piping hot kaalan at these shops, throughout the day and next, My tongue goes numb. But it is worth the try at your home, if you haven’t yet tried.

How to make roadside kaalan at home
To deep fry the mushroom, in a large mixing bowl, take chopped mushrooms and grated cabbages.
Add salt, Kashmiri chilli powder, and maida. At this point, red food color is also added which I have skipped. You can add if you prefer to.
Further add corn flour, and garam masala.
Start mixing it without adding water. Add water little at a time and mix to a thick paste.
Deep fry these until golden brown. It looks bright red in shops as they add food color.
In a deep kadai, heat oil and add chopped onions and ginger garlic paste. Fry until the raw smell leaves. Onions need not be fried too much.
Furthermore, add Turmeric powder, chilli powder, dry mango powder, chaat masala and garam masala. In shops, they have all these mixed together as a one spice mix. just saute for few seconds and immediately add water.
Cook in a high heat and let the water come to a rolling boil . Simmer and add the fried mushrooms.
Add little salt to adjust and start cooking again on high heat for a couple of minutes. The fry absorbs the moisture and increases in quantity.
Serve it piping hot topped with chopped onions, grated carrots and coriander leaves.

Ingredients
Mushroom batter – to deep fry
- 200 gms mushroom finely chopped
- 1 cup cabbage grated
- 1 tsp kashmiri chilli powder
- 1 tsp salt
- 1 cup flour maida
- 2 tbsp corn flour
- 1/2 tsp garam masala
to make kaalan masala
- 1 tbsp oil
- 1 medium onion finely chopped
- 1.5 tbsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1 tsp kashmiri chilli powder
- 1 pinch dry mango powder
- 1/2 tsp chaat masala
- 1/2 tsp garam masala
- 3/4 cup water
Instructions
- Mix everything given under the Mushroom batter – to deep fry.
- add water little at a tiime and mix to a thick sticky batter.
- heat oil and deep fry the mushrooms until golden. keep aside until use.
- Heat oil in a kadai and add chopped onions and ginger garlic paste.
- saute for a minute and add chilli powder, turmeric powder, dry mango, chaat masala and garam masala.
- add water and let it come to a rolling boil.
- add fried mushrooms and adjust salt.
- keep cooking on high heat until the moisture is absorbed and it becomes semi thick.
- serve it hot topped with grated carrots, chopped onions and coriander leaves.
