I landed up with this recipe on request. Someone someday requested on some social media for restaurant style mutton curry. I had a note on my book and it was long pending. Could not trace back who it was but I was hunting for the exact recipe since then.
Tried Mutton masala from 4-5 hotels through swiggy and sorted out the similarities and from the tips that I remember watching in a TV channel on a restaurant like gravies. I myself got this recipe written and tried it. My husband was surprised as to how exactly the taste was. Not to boast but you try and tell me how it was.

Mutton masala recipe
Ingredients
to fry onions
- 2 tbsp oil
- 4 medium onions thinly sliced
To grind along with fried onions
- 8-9 nos red chillies
- 2 tbsp cashews
- 1 tbsp poppy seeds
- 10 nos garlic
- 2 inch ginger
For marination
- 1/2 kg mutton
- handful mint leaves chopped
- handful coriander leaves chopped
- 2 sprig curry leaves chopped
- salt to taste
- 1/2 tsp turmeric powder
- 3/4 tbsp garam masala
- 2 tbsp coriander powder
- 1/2 cup fresh curd
For the curry
- 2 tbsp butter
- 1 tbsp oil
Onion petals topping
- 1 large onion cur into half and petals removed
- pinch salt
- pinch chilli powder
- 1/2 tsp oil
Instructions
- Firstly fry the thinly sliced onions until golden brown and take it in a bowl.
- To the fried onions, add cashews, poppy seeds, red chillies, ginger and garlic. Grind it to a fine paste.
- Mix the paste with mutton pieces in a mixing bowl.
- Further add salt, chopped coriander, chopped mint leaves, chopped curry leaves, turmeric powder, coriander powder, garam masala, chilli powder, and curd.
- Mix well and marinate it for at least 1 hour.
- Heat butter + oil in a pan and put in the marinated mutton pieces.
- Mix well, close and cook until the mutton is well cooked and soft.
- Lastly, roast the onion petals in a sepearate pan with a pinch of salt and chilli powder.
- Fry until roasted and add the onions to the curry and mix well.
- serve hot with chapathi and salad.

Mutton curry recipe for chapathi
1.Heat oil in a pan and Start frying thinly sliced onions with little salt in medium heat.
2. Fry until the onions turn brown and caramelized.
3. Take it in a blender/bowl and let it cool.
4. Along with the onions, add red chillies, poppy seeds, cashews as well.
5. Furthermore, add ginger and garlic. Grind them to a fine paste.
6. Clean, wash and cut the mutton pieces to small sizes and add the masala to it.
7. Together add chopped coriander, chopped mint, chopped curry leaves and salt to taste.
8. Add turmeric powder, garam masala, coriander powder and fresh curd.
9. Mix well with you hands until well combined and refrigerate the mixture.
10. Heat oil + butter in a pan and put in the marinated mutton to it along with the masala.
11. Mix well, close and cook for 30-40 minutes, based on the Mutton variety, the time taken to cook will vary. The mutton I used was very tender and cooked faster in just 35 minutes. While it takes even 60 minutes or even longer based on mutton type. So stir in between and check for the moisture. If too dry, sprinkle little water (Only If needed).
12.Meanwhile, Roast the onion petals with salt and chilli powder.
13. Roast until it is slightly brown/charred.
Add the roasted onions to the gravy and mix well.
Serve the delicious Mutton masala hot with chapathi and salad.
