Tomato Sambar for Idli/Dosa
Tomato sambar or thakkali sambar has lot of versions at my home. Pollachi thakkali kulambu, Coimbatore style thakkali kulambu, Kerala style thakkali kootan, erode style thakkali sambar. For all these recipes main ingredient is tomato and we need fully ripe tomatoes which will lift up the taste and color of dish. This recipe is basic version of thakkali sambar.
I have set up a kitchen garden at home and these tiny little ones were so fresh and fully ripe which i have used for this curry. Its really easy to grow a tomato plant and it can yield up to 1-1.5 kg per pot in a months time. How happy and satisfied it is to use the ingredients from your garden and if the dish comes out well and its like ” PERFECT! ”
Tomato Sambar for Idli/Dosa
Ingredients
To Roast and Grind - Set 1
- 10 - 15 Medium sized Shallots
- 1/2 inch Cinnamon stick
- 2 Nos Cloves
- 1 tsp Cumin seeds
- 1 tsp Fennel seeds
- 2 tsp Corriander seeds
- 2 Spring curry leaves
- 2 tbsp Grated coconut
- 1 tbsp Channa dal
To Roast and Grind - Set 2
- 4-5 Small sized Tomatoes Fully ripe
- 3 tbsp sambar powder
Other Ingredients
- 1 Medium sized Onion Finely chopped
- 2 tsp Mustard seeds
- 1 spring curry leaves
- 1 tsp turmeric powder
- Salt
Instructions
- Heat 2 tsp oil in a Kadai, roast everything given under "To Roast and Grind - Set 1". Fry until onions are completely brown. Transfer it to the mixer.
- Heat 1 tsp oil in same kadai, roast roughly chopped toamtoes. Once it turns mushy. Add Sambar powder and saute until oil oozes out.
- Transfer it to the same mixer and grind both set 1 & 2 to a fine paste.
- Heat 1 tsp oil in a cooker, splutter mustard seeds, saute chopped onions and saute until onions turn brown.
- To this add the ground masala, turmeric powder, salt and required water.
- close the cooker and Cook it in simmer for 15 mins or until 1 whistle whichever is first.
