Poosanikai Poriyal Recipe | Yellow pumpkin stir fry | Arasanikkai poriyal recipe is an easy to make, quick and simple recipe with yellow pumpkin and is very good for health. it is famous especially in kongunad regions and we call it as arasanikkai poriyal.

this arasanikkai known for its different names like manjal poosanikkai, parangikkai, mathan(malayalam) is altogther a tasty vegetable by itslef. Put in any curry or poriyal, it dominates first.

heat oil in a pan and pop in mustard seeds, cumin seeds and chana dal (kadalai paruppu). also add finely chopped small onions. adding small onions gives so much flavour to this dish and I bet you will thank me for that if you try once. fry the onions for few seconds.

add chopped yellow pumpkin. chop it finely so that it not not only looks tasty but also is easy to eat than large sized pieces. add salt, turmeric powder and chilli powder and mix well.

add water to the pan, close and cook until the pumpkin is soft. check if the pumpkin is soft by cutting a piece. it should be easily cut. takes approximately 10 minutes. since we have cut it very small pieces it gets cooked quickly.

Ingredients

  • 1 tbsp coconut oil
  • 1/2 tsp mustard seeds
  • 1 tsp chana dal
  • 1 tsp cumin seeds
  • 1/2 cup chopped small onions
  • 1 sprig curry leaves
  • 1.5 cups chopped pumpkin
  • 1/4 tsp turmeric powder
  • salt to taste
  • 1/2 tsp chilli powder
  • 1/3 cup grated coconut

Instructions
