Sprouted horse gram stir fry | sprouted kollu sundal recipe with step by step pics and video recipe. this is one of the best winter recipes that is healthy as well as helps in weight loss. horse gram sprouts are very good for kids just that we should cook it well to avoid indigestion problem.

Water used for cooking the sprouts can be used to make kollu rasam/ horsegram rasam or soups or curries. one of the best evening snacks that can be given to kids during winter seasons. it is best remedy for cold and cough.

some of the kollu recipes like kollu chamandhi, kollu rasam, horsegram thoran, kollu thogayal for rice are very popularly made during winter days in south India.

Lets see how to make kollu sundal with step by step pics:

for sprouting – I use the strainer, white cotton cloth and a small basin. wash and soak the horsegram overnight. rinse it thoroughly and tie it in wet cotton cloth and keep it on the strainer over a small bowl. leave it undisturbed the whole day and you can see small sprouts by night. If you want lengthier ones, sprinkle water again and leave it overnight. keep open in sunlight for an hour before you cook to get the best out of the sprouts.

Firstly, we have to cook the sprouts until it is soft. take 3 cups water in a pan and add 1 cup washed and cleaned sprouts to it.

add a pinch of turmeric powder to it.

mix well and let it boil for 10-15 minutes or until the horsegram sprouts are soft but not mushy. generally kollu/horsegram takes time to cook. so, it always good to cook it well else it may cause stomach troubles due to indigestion. Sprouted horse gram stir fry

strain the water from the sprouts. do not discard the water, use it for making kollu rasam.

Now, heat oil in a pan and crackle mustard seeds and cumin seeds.

when it crackles, add the red chilies broken and curry leaves a spring and mix well

when the curry leaves turn crisp, add the finely chopped onions. you can add little bit of salt at this stage to get the onions fried faster. Sprouted horse gram stir fry

Now, add the tomatoes and fry again for a minute until it is slightly mushy. need not cook until completely mushySprouted horse gram stir fry

add the cooked sprouts to this. 

sprinkle salt to taste. if you have already added salt for the onions while frying. then adjust accordingly.

now, to this add chilli powder, cumin powder, garam maslala. adding garam masala is optional but gives awesome taste to the dish.Sprouted horse gram stir fry

mix well and fry for a minute or two until the raw smell goes off and spices gets blended with the sprouts.

lastly, squeeze out few drops of lemon juice to the curry.

Ingredients

  • 1 cup sprouted horsegram
  • 1/4 tsp turmeric powder
  • 1 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1 dry red chilli broken
  • 1 spring curry leaves
  • 1/4 cup onion finely chopped
  • 1 small tomato finely chopped
  • salt to taste
  • 1/2 tsp cumin powder
  • 1/4 tsp garam masala
  • 1/8 tsp chilli powder
  • 1 tsp lemon juice

Instructions

  • cook horsegram with water and salt until it is soft. strain and keep it ready
  • heat oil in  a pan, crackle mustard seeds and cumin seeds.
  • add red chillies and curry leaves, fry until crisp
  • add onions and fry until brown
  • drop in tomatoes and fry until slighly mushy
  • put in the cooked sprouts, salt, cumin powder, chilli powder and garam masala. 
  • mix well until well combined. fry until raw smell goes off. 
  • serve warm.
