Herb chicken stir fry ~ Herb infused kozhi perattal

herb chicken stir fry is a Continental south Indian dish. Chicken is marinated with few spices and Italian dried herbs and cooked in simmer and finally roasted dry.
It is a different, exclusive try from Jinoo’s kitchen which turned out so yummy that I wanted to share it with you all.

Herb chicken stir fry recipe:

  • Marinate the chicken for an hour with all the ingredients  given  in above section “for marination”
  • Heat oil, add chopped onions and ginger garlic paste and little salt to fry until onions are turned brown. Now add the marinated chicken and fry it until the water starts coming out of chicken..
  • Now close the lid and let it cook for 15 min in medium flame. Once chicken is 3/4 th cooked, open the lid and let the water dry.
  • Cook in simmer, add chilli powder and garam masala to taste and mix well. Let it fry in simmer for 15 min. Add little oil if required to avoid burning.
    Tada!!! Yummy tasty chicken fry ready!!

Ingredients

  • 1/2 kg Chicken

For marination:

  • 1 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 3 dry Red chilli broken
  • 2 tsp Coriander powder
  • 1 tsp Jeera powder
  • 1/2 cup Curd
  • 1/2 tsp Basil
  • 1/2 tsp Oregano
  • 1/2 tsp Thyme
  • 1 tsp Ginger garlic paste
  • Salt to taste

For fry:

  • 2 medium Onions finely chopped
  • 1 tsp Ginger garlic paste
  • Oil
  • Salt for the onions
  • 1/4 tsp chilli powder
  • 1/4 tsp garam masala

Instructions

  • Marinate the chicken for an hour with all the ingredients given in above section "for marination". Let it sit for an hour.
  • Heat oil, add chopped onions and ginger garlic paste and little salt to fry until onions are turned brown. Now add the marinated chicken and fry it until the water starts coming out of chicken..

  • Now on cook in simmer.. add chilli powder and garam masala to taste and mix well. Let it fry in simmer for 15 min. serve hot.
